2-3 inch long, wide tubes with distinct ridges. Rigatoni is adaptable to any sauce but particularly complements those containing meat as the ridges and cavity “grabs” and holds textured morsels. It is adaptable to baking as a “macaroni and cheese” style dish. When you intend to use it in a baked dish only boil it for 1 minute prior to draining and combining with your sauce. Coating your baking dish with oil or butter your baking dish first prior to filling will make serving and cleanup easier. Rigatoni also adds interest and structure to a plated salad.
